Cold-pressed Nocellara olives give this oil a clean, green flavor with soft bitterness and a round mouthfeel. It’s a natural match for seafood, citrus, and dishes that benefit from freshness rather than heat.

Used this for a family dinner and even my kids said it tasted “less sharp” on the bread and salad.

Used it for simple tomato pasta; oil stays noticeable, kind of green and soft, but I expected a bit stronger taste.

I keep this on the counter and reach for it when I sauté zucchini or green beans, the pour is easy and it never glugs all over the pan. Tastes fresh and green without taking over the whole dish.

this has replaced my usual supermarket oil for pasta, the tomato sauce tastes brighter and the oil still comes through at the end, i also use it in focaccia dough and it gives a gentle green flavor without feeling heavy

I’ve been using this mostly for roasting and grilling vegetables for my kids’ lunches and our weeknight dinners, and it’s been great. It has a fresh, green taste that actually shows up on things like zucchini, peppers, and broccoli without making them bitter. I usually drizzle a little more on the veggies after they come out of the oven and it gives them a nice, clean flavor that doesn’t feel heavy. The bottle is disappearing faster than I expected because I keep reaching for it instead of my usual “cheap” cooking oil.

I used this on grilled sea bass with a squeeze of lemon, and the flavor stayed light and clean without that heavy aftertaste some oils have. My grandkids actually dipped their bread in it and commented it tasted “less strong,” but I still get a nice green, fresh note on top of the fish.

First time trying this and I mostly use it cold, drizzled on my kids’ tuna sandwiches and pasta salads, and the bottle disappears fast

First time splurging on nicer olive oil and I get it now. On warm bread it tastes really fresh and green with a little pepper in the back of my throat, just wish it were a bit cheaper for how fast we’re using it.

First time trying a Nocellara oil and I really like it on simple green salads with lemon—fresh, a little peppery, and you can tell it’s from a recent harvest. Flavor is almost too distinct for neutral cooking, so I save it for drizzling.

Bought this as a gift and tasted a spoonful first — really fresh, bright flavor, and the recent harvest date on the bottle made me feel good about actually wrapping it up.
